Jerusalem Artichoke (Helianthus tuberosus 'Waldspinel')
Jerusalem Artichoke (Helianthus tuberosus 'Waldspinel')
Pre-orders ship between Sept-Nov 2024, immediately after harvest, on a first-come, first served basis while supplies last.
Sunflower relative indigenous to North America that produces beautiful yellow flowers and an edible, potato-like tuber highly prized by chefs worldwide.
Move over french fries - there's a new tuber in town. Selected in Austria, "forest gem" (waldspinel in German) makes sense for this one! Plants mature early (they're typically the first or second to market for us, along with "Manitoba," and long before other varieties are available to restaurants or other shoppers). Tubers do not require peeling and can be cooked whole like fingerlings or eaten raw as a delicious snack. Sweetest in Spring. USDA Hardiness Zones 3-9.
You may also like "Manitoba" and "Shiawassee."
