Move over french fries - there's a new tuber in town. Selected in Austria, "forest gem" (waldspinel in German) makes sense for this one! Plants mature early (they're typically the first or second to market for us, along with "Manitoba," and long before other varieties are available to restaurants or other shoppers). Tubers do not require peeling and can be cooked whole like fingerlings or eaten raw as a delicious snack. Sweetest in Spring. USDA Hardiness Zones 3-9.
