Jerusalem Artichoke (Helianthus tuberosus 'Supernova')
Pre-orders ship between Sept-Nov 2024, immediately after harvest, on a first-come, first served basis while supplies last.
Sunflower relative indigenous to North America that produces beautiful yellow flowers and an edible, potato-like tuber highly prized by chefs worldwide. French painter Claude Monet was captivated by the gorgeous blooms - memorializing them in a (now famous) 1880 oil painting. They are fantastic pollinator plants, blooming late in the season when other flowers have faded and other forage is hard to find.
Supernova is a short, 5-7 ft. variety that branches (and flowers) heavily to the top of the plant. It produces huge clusters of easy-to-harvest, medium-to-large tubers, which even push each other up and out of the soil in some instances. A good “commercial” sunchoke with wide culinary appeal, and sweet, carrot-like flavor. Sweetest in Spring. USDA Hardiness Zones 3-9.
You may also like varieties "Olatin," "Topstar," and "Weisse Truffel."
We must sometimes split tubers before packaging. This does not interfere with first year yields.
