Jerusalem Artichoke (Helianthus tuberosus 'Gigant')
Jerusalem Artichoke (Helianthus tuberosus 'Gigant')
Sunflower relative indigenous to North America that produces beautiful yellow flowers and an edible, potato-like tuber highly prized by chefs worldwide. French painter Claude Monet was captivated by the gorgeous blooms - memorializing them in a (now famous) 1880 oil painting. They are fantastic pollinator plants, blooming late in the season when other flowers have faded and other forage is hard to find.
Gigant lives up to its name, with thick, strong-stemmed plants bearing large pine cone shaped tubers up to 3 times the size of other varieties, with a strong, nutty flavor. It also produces smaller, rounded tubers that are easy to clean. Sweetest in Spring. USDA hardiness zones 3-9.

We sometimes split tubers before packaging. This does not interfere with quality or first year yields.
